I want to make it. I've seen plenty of sheets on plates from various sources, Alinea's campari sheet, Ideas in Food's shrimp sheets, etc, but I've never seen it with caramel. Delicious...but how do you do it?

chad told me about your blog, very nice...i was at the ideas in food dinner in charleston on sun. a version of this technique was applied to a silverqueen corn "blanket" over crab. this version did not use any agar like alinea's rather a blend of different food gums and t. maltodextrin. here's a link to the picture and i can email it to you if the link doesn't work. take care, josh smith
