Everyone has them, but what do they mean to someone who cooks professionally?
Every little detail has to be examined when one wants to perform up to par and better in a kitchen. Like to chew gum or smoke cigarettes? You won't taste anything the rest of the day. Too hungover to think quickly? Your brain's your best friend, don't "feck it up". Craving that value meal? You'll be too full to want to eat anything during prep and service. Et cetera, et cetera.
Personally, I fall into the category of those people who thoroughly enjoy a nice meal of fast food. Call me evil, anti-agriculture/local foods/sustainability/buzzword of the week, but I have always had a soft spot for a burger, fries, and a Dr. Pepper, no matter the source.
t, thurs. is no good for me (tnhouse) but i look forward to your thoughts on it.
